How to Choose Ripe Avocados

When making guacamole, you need ripe avocados. Here are some ways to test for ripeness:

  1. Avocados are ripe when they are soft, but not mushy, near the top and bottom (not around the center). The peel may also be a bit darker when ripe, but the touch test is your best bet.
  2. Another way to check for ripeness is to remove the little stem on top of the avocado. If you see green, the avocado is ready to go. If you see brown, there are probably more brown spots in the avocado.
  3. Finally, if the stem is hard to remove, the avocado is not ripe enough to use just yet.

  • 4 ripe avocados, halved and pitted
  • 1 Roma tomato, diced
  • ¼ cup red onion, minced
  • ½ medium jalapeño pepper, seeded and diced
  • 1 teaspoon minced garlic
  • ¼ cup finely diced cilantro
  • ½ medium lime, juiced (about 1 tablespoon juice)
  • ¼ medium lemon, juiced (about 1 tablespoon juice)
  • 1 teaspoon kosher salt

Instructions

  • Scoop avocado from the skin and place into a medium bowl; mash until smooth, leaving some chunks for texture if desired.

How Long Will Guacamole Last?

After guacamole has been mixed together, store it in an airtight container in the refrigerator. It will last up to 2 days.

Pro Tip: When storing, flatten the top of the guacamole, add a thin layer of water on top, and seal the container. This will prevent browning while being stored in the refrigerator. When ready to serve (within a couple of days), simply pour off the water that was on top and stir.
