Ingredients

  • 1ยฝ cups cherry tomatoes, finely chopped (about 1 – 10 ounce container)
  • 1 tablespoon finely chopped cilantro
  • ยฝ cup red onion, finely chopped (about 1/2 a small onion)
  • 1 can (15.25 ounces) yellow corn, drained
  • 1 can (15.25 ounces) yellow corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15.5 ounces) black-eyed peas, drained and rinsed
  • ยผ cup jalapeรฑo pepper, seeded and finely chopped (about 1 small)
  • ยฝ cup red bell pepper, seeded and finely chopped (about 1 small pepper)
  • ยฝ cup orange bell pepper. seeded and finely chopped (about 1 small pepper)
  • ยฝ cup yellow bell pepper seeded and finely chopped (about 1 small pepper)
  • ยพ cup Italian vinaigrette, or more to taste
  • kosher salt and black pepper, to taste
  • Tortilla chips, for serving

Instructions

  • In a large mixing bowl, combine the cherry tomatoes, cilantro, red onion, yellow corn, white corn, black beans, black-eyed peas, jalapeรฑo, red pepper, orange pepper, and yellow pepper.
