- 1ยฝ cups cherry tomatoes, finely chopped (about 1 – 10 ounce container)
- 1 tablespoon finely chopped cilantro
- ยฝ cup red onion, finely chopped (about 1/2 a small onion)
- 1 can (15.25 ounces) yellow corn, drained
- 1 can (15.25 ounces) yellow corn, drained
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15.5 ounces) black-eyed peas, drained and rinsed
- ยผ cup jalapeรฑo pepper, seeded and finely chopped (about 1 small)
- ยฝ cup red bell pepper, seeded and finely chopped (about 1 small pepper)
- ยฝ cup orange bell pepper. seeded and finely chopped (about 1 small pepper)
- ยฝ cup yellow bell pepper seeded and finely chopped (about 1 small pepper)
- ยพ cup Italian vinaigrette, or more to taste
- kosher salt and black pepper, to taste
- Tortilla chips, for serving
Instructions
- In a large mixing bowl, combine the cherry tomatoes, cilantro, red onion, yellow corn, white corn, black beans, black-eyed peas, jalapeรฑo, red pepper, orange pepper, and yellow pepper.
- Pour in about half of the Italian vinaigrette and stir everything together until evenly coated. Taste and add more vinaigrette as needed, depending on your preference.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld. Stir again before serving. If desired, season lightly with salt and pepper.
