Cowboy Caviar

Cowboy Caviar is a colorful, zesty dip made with beans, corn, peppers, and tomatoes, perfect with chips or even as a side salad.

Ingredients

  • cups cherry tomatoes, finely chopped (about 1 - 10 ounce container)
  • 1 tablespoon finely chopped cilantro
  • ½ cup red onion, finely chopped (about 1/2 a small onion)
  • 1 can (15.25 ounces) yellow corn, drained
  • 1 can (15.25 ounces) yellow corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15.5 ounces) black-eyed peas, drained and rinsed
  • ¼ cup jalapeño pepper, seeded and finely chopped (about 1 small)
  • ½ cup red bell pepper, seeded and finely chopped (about 1 small pepper)
  • ½ cup orange bell pepper. seeded and finely chopped (about 1 small pepper)
  • ½ cup yellow bell pepper seeded and finely chopped (about 1 small pepper)
  • ¾ cup Italian vinaigrette, or more to taste
  • kosher salt and black pepper, to taste
  • Tortilla chips, for serving

Instructions

  • In a large mixing bowl, combine the cherry tomatoes, cilantro, red onion, yellow corn, white corn, black beans, black-eyed peas, jalapeño, red pepper, orange pepper, and yellow pepper.
  • Pour in about half of the Italian vinaigrette and stir everything together until evenly coated. Taste and add more vinaigrette as needed, depending on your preference.
  • Cover and refrigerate for at least 1 hour to allow the flavors to meld. Stir again before serving. If desired, season lightly with salt and pepper.
  • Serve chilled with tortilla chips for dipping.
