If you’re looking for a simple yet incredibly flavorful side dish, look no further than Cheesy Roasted Potatoes! These delicious cubes of Russet potatoes are perfectly seasoned and roasted to crispy perfection in the oven before being smothered in cheddar cheese. With just a few ingredients, this dish is sure to become one of your new favorite ways to enjoy potatoes. Don’t forget about potato staples like our favorite mashed potatoes!
Ingredients & Smart Substitutions
- Potatoes: I prefer using Russet potatoes cut into cubes because they get nice and crispy. You can choose to peel them or leave the skins on for added texture and ease. Yukon gold or red potatoes work well too, but you may need to adjust the cooking time. Remember to season the cubed potatoes with salt and pepper.
- Cheese: The star of this dish is cheddar cheese, which adds a burst of flavor. However, feel free to experiment with your favorite cheese or a blend of different cheeses to make this dish your own. Make your potatoes spicy with some pepperjack cheese, or add a nutty flavor by using Gruyere!
What To Serve With Cheesy Roasted Potatoes
These potatoes are so good, you might just want to eat a whole plateful by themselves! But if you’re looking to make a complete meal, they pair wonderfully with a variety of dishes. Here are some ideas:
- Meats: Serve alongside marinated steak bites or roasted chicken.
- Breakfast: They make a hearty addition to any breakfast, but our favorite is with our Breakfast BLT.
Storing & Reheating Cheesy Roasted Potatoes
To store, let the potatoes cool to room temperature, then place them in an airtight container in the refrigerator. They’ll stay fresh for 3-4 days. When you’re ready to enjoy them again, reheat in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through. For a quicker option, you can use the microwave.
