Ingredients

  • 2 pounds Russet potatoes, cut into ½-inch cubes (about 7 cups)
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups mild cheddar cheese, shredded
  • parsley, chopped for garnish

Instructions

Preheat and Prepare:

  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.

Season the Potatoes:

  • In a large bowl, add the cubed potatoes, olive oil, salt, and pepper.
  • Toss until the potatoes are evenly coated with the oil and seasonings.

Bake the Potatoes:

  • Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 25 minutes.

Flip and Continue Baking:

  • After 25 minutes, flip the potatoes to ensure even browning.
  • Continue to bake for an additional 25-30 minutes, or until the potatoes are golden brown and crispy.

Add the Cheese:

  • Sprinkle 2 cups of cheese evenly over the potatoes.
  • Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Serve:

  • Remove from the oven and garnish with chopped parsley.
  • Serve immediately
