Instructions
Preheat and Prepare:
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper.
Season the Potatoes:
In a large bowl, add the cubed potatoes, olive oil, salt, and pepper.
Toss until the potatoes are evenly coated with the oil and seasonings.
Bake the Potatoes:
Spread the seasoned potatoes in a single layer on the prepared baking sheet.
Bake in the preheated oven for 25 minutes.
Flip and Continue Baking:
After 25 minutes, flip the potatoes to ensure even browning.
Continue to bake for an additional 25-30 minutes, or until the potatoes are golden brown and crispy.
Add the Cheese:
Sprinkle 2 cups of cheese evenly over the potatoes.
Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and garnish with chopped parsley.
