Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • ½ pound ground beef
  • ½ pound ground Italian sausage
  • 1 tablespoon garlic minced
  • 1 tablespoon Italian seasoning
  • 2 teaspoons kosher salt
  • 3 teaspoons ground black pepper
  • 1 jar (24 ounces) marinara sauce or homemade
  • 4 cups (32 ounces) beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 bag (25 ounces) frozen cheese ravioli
  • ½ cup (119 g) heavy cream
  • 1 cup (113 g) mozzarella cheese, shredded
  • ½ cup (40 g) romano cheese, shredded
  • ½ cup (50 g) parmesan cheese, shredded, plus more for garnish
  • fresh parsley chopped, for garnish

Instructions

  • To a large pot over medium heat, add oil.
  • When the oil is hot, add onions, ground beef, Italian sausage, and garlic. Cook, stirring occasionally, breaking up the meat as you go, until the meat is no longer pink (8-10 minutes). Drain excess grease if necessary.
  • Add Italian seasoning, salt, and pepper.
  • Pour in marinara sauce, beef broth, and crushed tomatoes. Stir to combine and bring the soup to a simmer.
  • Once simmering, add ravioli and cook for 4-6 minutes, or until done, gently stirring occasionally to avoid breaking the ravioli.
  • Reduce heat to low. Add in heavy cream, mozzarella cheese, romano cheese, and parmesan, stirring until the cheeses are fully melted.
  • Garnish with parsley and parmesan cheese as desired. Enjoy!
