A hearty bowl of lasagna soup.

Winter calls for cozy soups like this one, and Lasagna Soup fits the bill perfectly. It’s a meal in itself, so make sure your pot can handle the goodness! If you’re a fan of easy one-pot meals, you’ll also adore my Ravioli Soup – it’s a winner!

Ingredients and Substitutions

Feeling creative? Here are some ingredient swaps to suit your taste:

  • Meat: Mix it up and use Italian sausage or even ground turkey.
  • Marinara Sauce: Elevate your soup with homemade marinara – it’s worth the effort!
  • Broth: No beef broth? No problem. Chicken broth works too, though it might alter the flavor slightly.
  • Noodles: No lasagna noodles? No worries. Mafalda noodles are a great alternative, or simply use what you have on hand.

CanYou Make This In a Slow Cooker?

Yes, you can make this soup in a slow cooker! Just follow the initial steps, then let it simmer away. Add the noodles towards the end to avoid gummy mishaps – timing matters!

Storage Instructions

Storing leftovers is a breeze – once cooled, pop it into an airtight container in the fridge. It’ll keep for a couple of days and makes for a fantastic lunch option. You can freeze it as well, but leave out the noodles before freezing to avoid mushiness. When you’re ready to enjoy, cook up some noodles separately and add them to the warmed soup – easy peasy!
