- 1 large egg, room temperature
- 1 ¼ cups whole milk, room temperature
- 3 tablespoons unsalted butter, melted and slightly cooled
- Maple syrup, for topping

Instructions
- In a large bowl add flour, baking powder, sugar, and salt and whisk to combine.
- In a separate bowl, add the egg, milk, and butter. and whisk together to combine.
- Add the wet mixture to the flour mixture and stir to combine. Do not overmix, some lumps are ok.
- Preheat a nonstick griddle to 300°F and spray lightly with cooking spray.
- Pour ⅓ cup of batter onto the griddle and spread the pancake into an even circle, about 4 inches wide.
- Working in batches, cook the pancake on one side for 3-4 minutes, or until the bubbles on the surface of the pancake start to pop and the bottom is golden brown.
- Flip over the pancakes and cook an additional 3-4 minutes, or until golden brown.
- Repeat with the remaining pancake batter.
- Serve warm, topped with softened butter and maple syrup.
