In a large bowl add flour, baking powder, sugar, and salt and whisk to combine.
In a separate bowl, add the egg, milk, and butter. and whisk together to combine.
Add the wet mixture to the flour mixture and stir to combine. Do not overmix, some lumps are ok.
Preheat a nonstick griddle to 300°F and spray lightly with cooking spray.
Pour ⅓ cup of batter onto the griddle and spread the pancake into an even circle, about 4 inches wide.
Working in batches, cook the pancake on one side for 3-4 minutes, or until the bubbles on the surface of the pancake start to pop and the bottom is golden brown.
Flip over the pancakes and cook an additional 3-4 minutes, or until golden brown.
Repeat with the remaining pancake batter.
Serve warm, topped with softened butter and maple syrup.
