Ingredients

For the Salmon:

  • 1 pound fresh salmon fillet
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Patties:

  • 2 large eggs, at room temperature
  • 1 teaspoon minced garlic
  • 1/4 cup chopped yellow onion
  • 1/2 cup dry bread crumbs
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon kosher salt
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the salmon fillet skin-side down on the prepared baking sheet. Drizzle it with olive oil, then sprinkle with salt and pepper.
  • Bake the salmon for 15-20 minutes, or until flaky. You can check for doneness by inserting a meat thermometer into the thickest part of the fish. It should reach an internal temperature of 145°F (63°C).
