Blackened Seasoning

Ingredients
- 2 lbs boneless skinless chicken breasts pounded to an even thickness
- 1 package (10 ounces) cherry tomatoes
- 1 large jalapeno pepper, sliced into rounds (about ¼ cup)
- 1 large red onion, halved and sliced into ½ -inch pieces (about 1 ½ cups)
- ¼ cup (54 g) extra virgin olive oil
- 2 tablespoons blackened seasoning
- lime wedges for serving

- salt and pepper, to taste
Instructions
- Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
- Top with chicken, tomatoes, jalapenos, and red onion.
- Drizzle everythign in oil, turning and tossing to coat evenly. Evenly season with blackened seasoning.
- Bake for 25-30 minutes, or until the chicken is cooked through (165°F).S
- Generously squeeze fresh lime juice over the dish before serving.
- Salt and pepper to taste.
