Ingredients & Substitutions

Chicken Wings: Start with fresh, plump bone-in chicken wings. Opt for the ‘flats’ and ‘drummettes’ for the best texture.

Oil: Choose vegetable or canola oil, both have high smoke points and neutral flavors.

Mustard: As for mustard, yellow mustard is the star, but Dijon mustard can step in if needed.

Air Fryer & Baked Options

Not keen on deep-frying? No problem. The air fryer method, will achieve the same crispy texture minus the excess oil. Alternatively, opt for the oven-baked route for a healthier twist. Whichever method you choose, the result is crispy, golden brown wings bathed in irresistible sauce.

Air Fryer Method:

  1. Preheat your air fryer to 400°F (200°C)
  2. Coat the chicken wings in mustard, buffalo sauce, and flour.
  3. Arrange the wings in a single layer in the air fryer basket, ensuring they are not overcrowded.
  4. Air fry the wings for 20-25 minutes, flipping them halfway through to ensure even cooking.
  5. Once cooked, toss the wings in the sauce.

Oven-Baked Method:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Coat the chicken wings in mustard, buffalo sauce, and flour.
  3. Arrange the wings on the prepared baking sheet, making sure they are evenly spaced out.
  4. Bake the wings for 45-50 minutes, flipping them halfway through to ensure even browning.
  5. Once baked, toss the wings in the sauce.

How to Store Fried Chicken Wings

Can’t finish them all in one go? No worries. Simply let the wings cool completely before storing them in an airtight container in the refrigerator. When you’re ready to indulge again, reheat them in the oven or air fryer for that fresh-out-of-the-fryer crispiness.

Succulent chicken wings deep-fried to a crispy golden brown, then generously coated in a sweet and tangy honey mustard and buffalo sauce. These wings are about to become your latest obsession.

Ingredients

WINGS

  • 2 pounds chicken wings
  • ¼ cup yellow mustard
  • ¼ cup buffalo sauce
  • 1 cup all-purpose flour
  • vegetable oil, for frying

SAUCE

  • ¼ cup honey
  • ¼ cup unsalted butter, melted
  • 2 tablespoons freshly squeezed lemon juice, about 1 medium lemon
  • 1 teaspoon kosher salt

Instructions

  • Line a baking sheet with parchment paper.
  • To a large bowl, add wings, mustard, and buffalo sauce. Toss to coat.
  • To a separate bowl, add flour. Working one at a time, add the coated wings to the flour and toss to coat. Shake off excess and place on the baking sheet.

FIRST FRY

  • Fill a large pot with oil until it reaches halfway up the pot. Heat the oil to 375°F, using a thermometer to check the temperature. While the oil is heating, set a wire rack on top of a separate baking sheet.
  • Working 2-3 wings at a time to maintain the oil temperature, add the wings to the hot oil and fry for 6-8 minutes, or until crispy and golden brown.
  • Carefully remove the wings from the oil and place them on the wire rack.

SECOND FRY

  • Bring the oil temperature back up to 375°F. Once hot, place the fried wings back into the oil for an additional 2 minutes. Remove from the oil and set on the wire rack to allow excess oil to drain off as you make the sauce.

SAUCE

  • In a medium bowl add melted butter, honey, lemon juice, and salt. Stir to combine. Set adide.

ASSEMBLY

  • Place the fried wings into a large bowl.
  • Pour the sauce over the wings and toss to coat.
