  • Parmesan Cheese: Freshly grated parmesan works best for melting into the noodles, but pre-grated cheese can be used as well.

Ingredients

Noodles

  • 16 ounces mafaldine noodles, or any pasta you have on hand
  • 1 teaspoon kosher salt
  • 1 tablespoon chicken bouillon powder

Garlic Butter Sauce

  • ½ cup (1 stick) salted butter
  • 2 teaspoons chicken bouillon powder
  • 2 teaspoons minced garlic
  • ¼ cup grated parmesan cheese, plus more for garnish (optional)
  • chopped parsley, for garnish
  • salt and pepper, to taste
  • fresh thyme, for garnish

Instructions

  • Fill a large pot halfway with water. Add salt and bring to a boil. Stir in bouillon powder and add the noodles. Cook until al dente, about 8 minutes.
  • Reserve 1 cup of pasta water, then drain the rest. Set noodles aside while you prepare the garlic butter sauce.
  • In the same pot, melt the butter over medium heat. Stir in the bouillon powder and garlic, cooking for 1 minute until fragrant.
  • Add ½ cup of the reserved pasta water and stir to combine.
  • Return the noodles to the pot and toss with parmesan cheese. Add more pasta water, a little at a time, if needed, until the sauce reaches your desired consistency.
  • Top with parsley and additional parmesan cheese. Serve warm.
