Fresh blackberry chicken salad with a sweet balsamic dressing, crunchy walnuts, creamy avocado, and roasted chicken. Perfect summer meal!



  • 1 recipe oven-roasted chicken homemade or store-bought
  • 6 cups spring mix lettuce
  • 1 cup fresh blackberries
  • 1 medium avocado, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup chopped walnuts

Blackberry Balsamic Dressing

  • ½ cup fresh blackberries
  • 2 teaspoons coarse dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • salt and pepper to taste


  • Prepare chicken according to recipe instructions.
  • To a large bowl add, spring mix, blackberries, avocado slices, red onion, and walnuts. Set aside.
  • In a medium bowl, add blackberries and use a fork to mash and release thier juices. Add mustard, balsamic, olive oil, honey and whisk to combine. Salt and pepper to taste.
  • Slice the roasted chicken and add it to the salad. Drizzle dressing over the salad and toss to combine.
