Mediterranean Chickpea Salad
If you are craving a summer salad, without all of the heavy ingredients, this is the one for you! We love anything with fresh garden veggies, and this salad has quite a few! Cucumbers, tomatoes, and red onion, round this recipe out and add a ton of amazing nutrients. As an added bonus, the chickpeas are loaded with protein so this salad will fill you right up!

Chickpeas {Garbanzo Beans}
This recipe uses canned chickpeas (Garbanzo beans), for convenience but you can absolutely use dried chickpeas. The process for softening chickpeas is relatively easy but does take some time. Mediterranean Salad
Ingredients
- 3 Roma tomatoes, diced (about 1½ cups)
- 1 can (15 ounces) garbanzo beans, or fresh drained and rinsed
- 1 medium cucumber, diced (about ½ cup)
- ½ red onion, finely diced (about ½ cup)
- 2 tablespoons chopped cilantro
- ¼ cup feta cheese, crumbled
- 3 tablespoons extra virgin olive oil
- ¼ cup lemon juice, freshly squeezed
- ¼ teaspoon kosher salt
- ¼ teaspoon fresh cracked pepper
Instructions
- To a large bowl add tomatoes, garbanzo beans, cucumber, onion, cilantro, and feta cheese.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad mixture.
- Mix together and transfer to the refrigerator to chill for 15 minutes before serving.
