Cucumbers, tomatoes, and red onion, round this recipe out and add a ton of amazing nutrients. As an added bonus, the chickpeas are loaded with protein so this salad will fill you right up!

This recipe uses canned chickpeas (Garbanzo beans), for convenience but you can absolutely use dried chickpeas. The process for softening chickpeas is relatively easy but does take some time. We love a good custom salad! You have free range to add or take away to this salad and make it your way! We like to add a protein source such as roasted chicken, cooked quinoa, or toasted almonds. Additionally, you can add more vegetables, such as peppers, Kalamata olives, or avocado.

Ingredients

  • 3 Roma tomatoes, diced (about 1½ cups)
  • 1 can (15 ounces) garbanzo beans, or fresh drained and rinsed
  • 1 medium cucumber, diced (about ½ cup)
  • ½ red onion, finely diced (about ½ cup)
  • 2 tablespoons chopped cilantro
  • ¼ cup feta cheese, crumbled
  • 3 tablespoons extra virgin olive oil
  • ¼ cup lemon juice, freshly squeezed
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper

Instructions

  • To a large bowl add tomatoes, garbanzo beans, cucumber, onion, cilantro, and feta cheese.
