Best served hot, these fritters make an excellent snack, appetizer, or side dish. While flavorful on their own, they pair wonderfully with dipping sauces like sour cream, salsa, or aioli. Ingredients & Substitutions:
- Corn: Use two cans of sweet corn kernels, drained, or fresh corn (about 3 cups of kernels) for enhanced flavor when in season.
- Eggs: Act as a binder in the batter, helping the fritters hold their shape and adding texture.
- Milk: Whole milk provides a richer flavor, but lower-fat options can be used, though they may alter the taste and texture slightly.
- Green Onions: Also known as scallions or spring onions, add a fresh and savory flavor. Can be substituted with white or yellow onions.
- Cheese: Finely shredded mild cheddar cheese is added for a savory element and to help bind the fritters. For a stronger flavor, use sharp cheddar, Monterey Jack, or Pepper Jack cheese for a spicy kick.
Make Corn Fritters Ahead of Time:
Mix the batter ahead of time and store it in an airtight container in the refrigerator for up to 24 hours. When ready, simply fry and enjoy!
How to Serve Corn Fritters:
- Dipping Sauces: Serve with fresh pico de gallo, aioli, or sweet chili sauce. For parties, make smaller fritters with toothpicks for easy grabbing.
- Sandwiches & Sliders: Use fritters as a sandwich base or in a slider with a Hawaiian roll.

Storing and Reheating Corn Fritters:
Store fritters in an airtight container in the refrigerator for up to 2-3 days, separating layers with parchment or wax paper to prevent sticking. Reheat in the oven, air fryer, or in a skillet over medium-low heat. Avoid microwaving as it can make them lose their crispiness. For longer storage, freeze fritters for up to a month and thaw in the refrigerator overnight before reheating.
Corn Fritters
Ingredients
- 2 cans 15.25 ounces each corn kernels, drained (about 3 cups kernels)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- ¼ teaspoon pepper
- 2 large eggs room temperature
- ½ cup whole milk room temperature
- 5-6 chopped green onions about 1/3 cup
- ½ cup mild cheddar cheese finely shredded
- vegetable oil for frying
Instructions
- Add all ingredients, except oil to a large bowl and mix until combined.
- Add about 1/2 inch of oil to a large skillet over medium heat. Working in batches of 3 or 4, add 3 tablespoons of corn fritter batter to the hot oil in the skillet. Carefuly flatten the tops so that each fritter is about 3 inches wide.
- Cook for 3-4 minutes on each side, or until golden brown and cooked through. Place the cooked fritters on a paper towel-lined plate. Repeat with the remaining batter.
- Serve immediately with your favorite dipping sauce.
Notes
Preheat the oven to 400°F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
Spoon the fritter batter onto the lined baking sheet, flattening the tops.
Spray the tops of the fritters with more cooking spray.
Bake for 12 minutes, flip and cook 10-12 more minutes or until golden brown and cooked through. Air Fryer Instructions
Line the basket of the air fryer with parchment paper and spray with nonstick cooking spray.
Working in batches of 1 or 2, spoon the fritter batter onto the parchment paper, pressing down to flatten.
Spray the tops of the fritters with nonstick cooking spray.
Air fry at 390°F for 7 minutes, flip, and cook for 7 more minutes or until golden brown and cooked through.
Serve immediately.
