Corn Fritters

Golden-brown corn fritters with a savory batter, perfect as a snack, appetizer, or side dish. Easy to make and delicious with dipping sauces

Ingredients

  • 2 cans 15.25 ounces each corn kernels, drained (about 3 cups kernels)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 2 large eggs room temperature
  • ½ cup whole milk room temperature
  • 5-6 chopped green onions about 1/3 cup
  • ½ cup mild cheddar cheese finely shredded
  • vegetable oil for frying

Instructions

  • Add all ingredients, except oil to a large bowl and mix until combined.
  • Add about 1/2 inch of oil to a large skillet over medium heat. Working in batches of 3 or 4, add 3 tablespoons of corn fritter batter to the hot oil in the skillet. Carefuly flatten the tops so that each fritter is about 3 inches wide.
  • Cook for 3-4 minutes on each side, or until golden brown and cooked through. Place the cooked fritters on a paper towel-lined plate. Repeat with the remaining batter.
  • Serve immediately with your favorite dipping sauce.

Notes

Oven Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
Spoon the fritter batter onto the lined baking sheet, flattening the tops.
Spray the tops of the fritters with more cooking spray.
Bake for 12 minutes, flip and cook 10-12 more minutes or until golden brown and cooked through.
Air Fryer Instructions
Line the basket of the air fryer with parchment paper and spray with nonstick cooking spray.
Working in batches of 1 or 2, spoon the fritter batter onto the parchment paper, pressing down to flatten.
Spray the tops of the fritters with nonstick cooking spray.
Air fry at 390°F for 7 minutes, flip, and cook for 7 more minutes or until golden brown and cooked through.
Serve immediately.
