Add all ingredients, except oil to a large bowl and mix until combined.
Add about 1/2 inch of oil to a large skillet over medium heat. Working in batches of 3 or 4, add 3 tablespoons of corn fritter batter to the hot oil in the skillet. Carefuly flatten the tops so that each fritter is about 3 inches wide.
Cook for 3-4 minutes on each side, or until golden brown and cooked through. Place the cooked fritters on a paper towel-lined plate. Repeat with the remaining batter.
Serve immediately with your favorite dipping sauce.
