Ingredients

Salad

  • 6 cups mixed greens, rinsed and dried
  • 1 cup cherry tomatoes, sliced in half
  • 1 medium cucumber, thinly sliced
  • 1 small red onion, finely diced
  • cup pepitas

Vinaigrette

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • ¼ teaspoon kosher salt
  • teaspoon ground black pepper

Instructions

  • In a large salad bowl, add mixed greens, cherry tomatoes, cucumbers, red onion, and pepitas. Toss to combine.
  • In a small bowl, combine the olive oil, red wine vinegar, Dijon mustard, honey, kosher salt, and black pepper. Whisk together until the dressing is fully emulsified and smooth.
  • Drizzle the vinaigrette over the salad just before serving. Toss gently with tongs or clean hands to evenly coat the greens, vegetables, and pepitas.
