Ingredients

Salad

  • 6 cups mixed greens, rinsed and dried
  • 1 cup cherry tomatoes, sliced in half
  • 1 medium cucumber, thinly sliced
  • 1 small red onion, finely diced

Vinaigrette

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ยฝ teaspoon honey
  • ยผ teaspoon kosher salt
  • โ…› teaspoon ground black pepper

Instructions

  • In a large salad bowl, add mixed greens, cherry tomatoes, cucumbers, red onion, and pepitas. Toss to combine.
