Crispy coconut peach chicken is weeknight-friendly comfort food with a bright summer finish. Juicy chicken bites get a golden coconut-panko crust, then they’re tossed in a glossy peach glaze that’s sweet, tangy, and just a little sharp from mustard and vinegar. The sauce can be made ahead, so dinner comes together fast when you’re ready to cook. If you love coconut, try pairing this recipe with our Coconut Rice!

Why You’ll Love This Recipe

  • Crunchy outside, tender chicken inside, with a sticky peach glaze that clings to every bite
  • Ready in about 25 minutes, with an air-fryer option if you want less stovetop oil
  • Easy to serve over rice or pasta, or just pile the glazed chicken on a plate
  • The peach sauce keeps well, so you can prep that part before dinner

Tips for Success

The coconut can look darker in the air fryer than it tastes. Trust an instant-read thermometer and pull the chicken at 165°F.

Pulse the shredded coconut until it’s finely chopped so it sticks evenly and browns instead of burning in big flakes.

Shake off extra flour before the egg wash. Too much flour makes the crust pasty and keeps the coconut from clinging.

Don’t crowd the skillet. Cook in batches so the crust stays crisp and golden.

Wipe the pan before making the sauce. Leftover browned crumbs can make the glaze taste scorched.

Ingredients and Substitutions

Chicken

Boneless, skinless chicken breast is the easiest cut for even 1-inch bites. Boneless, skinless thighs work too and stay a little juicier. Cook either one to 165°F in the center.

Sweetened shredded coconut

This is what gives the crust its light sweetness and extra browning. Unsweetened coconut can stand in, but the coating will taste less dessert-like and may look a bit paler. If you use unsweetened, pulse it the same way so the shreds are fine enough to stick.

Panko

Panko stays crisper than regular breadcrumbs and keeps the crust light. Plain breadcrumbs will work in a pinch. The texture will be denser and a little less crunchy.

Peach preserves

Preserves are the base of the glaze and pack the most peach flavor. Peach jam is the closest swap. Peach jelly will also work; the sauce will be smoother and slightly less textured.

Apple cider vinegar

This is what keeps the glaze from tasting flat and sugary. White wine vinegar or rice vinegar can replace it in the same amount.

Dijon mustard

Coarse-ground Dijon adds tang and a little body. Smooth Dijon is fine. Yellow mustard works if that is what you have; the glaze will taste milder and more familiar.

Soy sauce

A small amount adds salt and depth so the peach glaze is not one-note sweet. Tamari or coconut aminos can replace it, measure for measure.

Red pepper flakes

They give a very light heat in the background. Leave them out for a no-spice version, or add a pinch more if you want the glaze a little bolder.

Canola oil

Any neutral, high-heat oil works for the skillet, including vegetable or avocado oil. Extra-virgin olive oil is better saved for the glaze, not the fry step.

Rice

Long-grain white rice is the standard base. Brown rice, cauliflower rice, or pasta can take the same glaze and chicken.

Storage Tips

Refrigerate leftover chicken and sauce in an airtight container for 3 to 4 days. Reheat gently in a skillet or microwave. The glaze can also be made 2 to 3 days ahead and warmed before tossing with freshly cooked chicken. Freezing is not ideal; the coconut crust softens after thawing.

Make crispy coconut peach chicken in 25 minutes. Juicy bites, crunchy crust, and a sweet-tangy glaze that clings to every piece!

Ingredients

For serving

  • 4 servings cooked long-grain white rice

Chicken

  • ½ cup (46 g) sweetened shredded coconut
  • ½ cup (54 g) panko breadcrumbs
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (31 g) all-purpose flour
  • 1 large egg, room temperature, beaten
  • 1 boneless skinless chicken breast, cut into 1-inch cubes
  • 2 tablespoons canola oil

Peach glaze

  • 1 cup (320 g) peach preserves
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons coarse-ground Dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • Chopped fresh parsley, for garnish

Instructions

Chicken

  • Add the coconut to a food processor and pulse until finely chopped. Add the panko, kosher salt, and black pepper. Pulse once or twice, just to combine.
  • Set out three bowls: flour in the first, beaten egg in the second, and the coconut-panko mixture in the third.
  • Dredge the chicken in flour and tap off the excess. Dip in egg, then press into the coconut mixture so every side is coated. Set the pieces on a plate.
  • Heat the canola oil in a large nonstick skillet over medium-high heat. Add the chicken in a single layer and cook until golden, about 4 to 5 minutes per side, or until the center reaches 165°F. Work in batches if needed.
  • Transfer the chicken to a plate and tent with foil. Wipe out the skillet.

Peach glaze

  • Reduce the heat to medium. Add the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon, garlic, kosher salt, black pepper, and red pepper flakes. Stir and heat until the sauce is simmering.
  • Return the chicken to the skillet and toss until coated.
  • Serve over rice and finish with parsley.

Air fryer option

  • Coat the chicken as directed and arrange it in a single layer in the basket. Air fry at 400°F for 8 minutes, flipping halfway, until the chicken reaches 165°F. The coconut may look dark; it should not taste burnt.
