Jalapeno Peach Chicken Skewers

Try these Jalapeno Peach Chicken Skewers — sweet, spicy, and savory perfection! Easy to make in an air fryer or on the grill.

Ingredients

  • 15 wooden skewers, soaked in water for 30 minutes

Chicken

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil, plus extra for brushing over skewers

Skewers

  • 4 medium yellow peaches, quartered, then halved for a total of 32 pieces
  • 3 medium jalapeño peppers, halved, seeded, cut into chunks

Peach Glaze

  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • teaspoon red pepper flakes

Instructions

  • To a large bowl, add chicken, salt, pepper, chili powder, and olive oil. Toss to coat.
  • To each skewer, thread peach, chicken, jalapeño, chicken, jalapeño, chicken, and peach. (Feel free to arrange the skewers as desired.)
  • Preheat the air fryer to 375°F.
  • Brush the skewers with olive oil to prevent sticking. Place them in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to work in batches.
  • Air fry the skewers for 11-12 minutes, or until the chicken reaches an internal temperature of 165°F.
  • While the skewers are cooking, prepare the peach glaze. To a medium saucepan, add peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Mix until combined and cook until warmed through.
  • Once the skewers are done, brush them generously with the glaze.
  • Serve warm.

Notes

Oven & Grilling Instructions

Oven:

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. Assemble the skewers and place them on the prepared baking sheet.
  3. Bake for 25-30 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F.
  4. Remove from the oven and brush generously with the peach glaze.

Grill:

  1. Preheat the grill to medium-high heat.
  2. Assemble the skewers and place them on the grill.
  3. Cook for 8-10 minutes per side, or until the chicken reaches an internal temperature of 165°F.
  4. Brush with the peach glaze before serving.
