To a large bowl, add chicken, salt, pepper, chili powder, and olive oil. Toss to coat.
To each skewer, thread peach, chicken, jalapeño, chicken, jalapeño, chicken, and peach. (Feel free to arrange the skewers as desired.)
Preheat the air fryer to 375°F.
Brush the skewers with olive oil to prevent sticking. Place them in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to work in batches.
Air fry the skewers for 11-12 minutes, or until the chicken reaches an internal temperature of 165°F.
While the skewers are cooking, prepare the peach glaze. To a medium saucepan, add peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Mix until combined and cook until warmed through.
Once the skewers are done, brush them generously with the glaze.
Serve warm.
