Heat a griddle to 350°F, and spray lightly with cooking spray.
Beat eggs, milk, sugar, vanilla, salt, and cinnamon with wire whisk until smooth.
Dip bread into egg mixture, adequately coating all sides. Place the coated bread on the hot griddle and cook for 2-4 minutes on each side, or until golden brown.
Serve, topped with butter, syrup, and fresh fruit.
