Preheat the oven to 400°F and line a baking sheet with parchment paper.
Peel away the outer layers of the garlic, leaving the cloves connected. Trim the tops, exposing the cloves.
Place garlic heads on aluminum foil, drizzle with olive oil, and seal into a foil packet. Bake for 45-50 minutes until golden brown and soft.
Allow garlic to cool, then squeeze cloves into a bowl and mash into a paste.
