Winter Chopped Salad

Savor the vibrant flavors of winter with a chopped salad featuring lettuce, chicken, apples, pomegranate seeds, and a tangy balsamic dressing!

Ingredients

For the Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Salad

  • 6 cups romaine lettuce, chopped
  • 2 cups cooked chicken, diced
  • 1 medium Honeycrisp apple diced
  • 1/2 cup red onion, diced
  • 1/2 cup pomegranate seeds
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans, roughly chopped (store-bought or homemade)
  • 1/2 cup feta cheese, crumbled

Instructions

  • In a small bowl or jar, whisk olive oil, balsamic vinegar, Dijon mustard, honey, garlic powder, kosher salt, and black pepper until well combined. Set aside to let the flavors meld.
  • In a large bowl, combine romaine lettuce, chicken, apple, red onion, pomegranate seeds, dried cranberries, candied pecans, and feta cheese. Toss gently to mix.
  • Right before serving, drizzle the prepared dressing over the salad. Toss lightly to coat all ingredients evenly. Serve immediately.
