Salisbury Steak with Onion Gravy

Ingredients

For the patties

  • 1 pound ground beef
  • 2 large eggs
  • 1 cup potato chips, crushed
  • 2 teaspoons dry mustard
  • 2 teaspoons garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil

For the onion gravy

  • 1 yellow onion, thinly sliced
  • 2 cups beef broth, plus more as needed
  • 1 tablespoon cornstarch
  • 4 dashes Worcestershire sauce
  • Salt and black pepper, to taste

Instructions

Make the patties

  • Add the ground beef, eggs, crushed potato chips, dry mustard, garlic powder, Worcestershire sauce, salt, and pepper to a mixing bowl.
  • Mix with your hands until the ingredients are just combined, then shape into 4 even patties.
  • Heat the butter and olive oil in a 12-inch skillet over medium-high heat.
  • Cook the patties for about 5 minutes per side, until browned and cooked through.
  • Transfer the patties to a plate and pour off excess fat from the skillet.

Make the gravy

  • Reduce the heat to medium and add the sliced onion. Cook, stirring often, until softened and golden, 3 to 5 minutes.
  • Whisk the beef broth and cornstarch together in a small bowl until smooth.
  • Pour the broth mixture into the skillet with the onions. Add the Worcestershire sauce.
  • Bring to a gentle boil, stirring, until the gravy thickens. Add more broth if it becomes too thick. Season with salt and pepper.
  • Return the patties to the skillet. Spoon gravy over the top and simmer for 2 to 3 minutes, until heated through.
