Pumpkin Spice French Toast

Pumpkin Spice French Toast is thick Texas toast soaked in pumpkin egg batter, then griddled until golden. Serve with butter and pure maple syrup!

Ingredients

Batter

  • 4 large eggs, room temperature
  • 1 cup (245 g) whole milk, room temperature
  • ½ cup (122 g) pure pumpkin
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract

For cooking and serving

  • 10 to 12 slices Texas toast, preferably day-old
  • Nonstick cooking spray
  • Unsalted butter, for serving
  • Pure maple syrup, for serving

Instructions

Batter

  • Add the eggs, milk, pumpkin, pumpkin pie spice, and vanilla to a medium bowl.
  • Whisk until the batter is smooth and evenly colored.

Griddle

  • Heat a griddle or skillet to 350°F. Lightly coat it with cooking spray.
  • Dip each slice into the batter, coating both sides. Hold it over the bowl for a few seconds so the excess drips off.
  • Cook for 2 to 3 minutes per side, until golden brown. Spray the griddle again between batches.
  • Serve right away with butter and maple syrup.
