Jalapeño Corn Dip

This creamy Jalapeño Corn Dip is the perfect blend of spicy jalapeños, sweet corn, and crispy bacon. Ideal for any gathering!

Ingredients

  • 8 ounces cream cheese, room temperature
  • 8 strips thick-cut bacon, cooked and crumbled
  • 1 can (11 ounces) sweet corn, drained
  • 1 medium jalapeño pepper seeded and diced
  • 1 ½ cups mozzarella cheese shredded
  • ½ teaspoon kosher salt
  • teaspoon cayenne pepper

Instructions

  • Preheat oven to 400°F.
  • In a medium bowl, beat the cream cheese with a hand mixer until smooth.
  • Add the bacon (reserve about 2 tablespoons for topping) corn, jalapeño, mozzarella cheese, salt, and cayenne pepper. Mix to combine.
  • Transfer the mixture to an oven safe skillet and spread into an even layer. Top with remaining bacon. Bake for 20 minutes, until the edges begin to bubble.
  • Serve hot with tortilla chips.
