Heat olive oil in a large pot over medium heat.
Once hot, add onion and cook, stirring occasionally, until softened and translucent.
Add diced potatoes and cook for about 3 to 4 minutes, stirring occasionally, just to begin softening the edges
Stir in garlic, thyme, oregano, salt, pepper, diced tomatoes with their juices and vegetable broth. Stir to combine.
Bring to a boil over high heat. Once boiling, reduce heat to low and simmer for 10 minutes to allow the flavors to meld.
Add frozen mixed vegetables directly into the pot. Stir and simmer for another 10 to 12 minutes, or until the vegetables are heated through and tender.
Garnish with fresh parsley.
