Easy Vegetable Soup

Cozy and simple vegetable soup made with frozen veggies and potatoes. Easy to make, beginner-friendly, and full of flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion diced
  • 2 medium Yukon gold potatoes, peeled and diced into ½-inch cubes
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 14.5-ounce can diced tomatoes, with juices
  • 6 cups vegetable broth
  • 1 16-ounce bag frozen mixed vegetables
  • fresh parsley chopped for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Once hot, add onion and cook, stirring occasionally, until softened and translucent.
  • Add diced potatoes and cook for about 3 to 4 minutes, stirring occasionally, just to begin softening the edges
  • Stir in garlic, thyme, oregano, salt, pepper, diced tomatoes with their juices and vegetable broth. Stir to combine.
  • Bring to a boil over high heat. Once boiling, reduce heat to low and simmer for 10 minutes to allow the flavors to meld.
  • Add frozen mixed vegetables directly into the pot. Stir and simmer for another 10 to 12 minutes, or until the vegetables are heated through and tender.
  • Garnish with fresh parsley.
