Caprese Tortellini Salad combines cheese-filled tortellini, tomatoes, mozzarella, and basil, tossed in a tangy balsamic vinaigrette.

Ingredients

Salad

  • 1 package (19 ounces) cheese tortellini, cooked according to package instructions and cooled completely
  • 2 cups cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • 8 ounces mozzarella pearls

Dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Fresh basil, sliced

Instructions

  • In a large bowl, combine tortellini, cherry tomatoes, red onion, and mozzarella pearls.
  • In a small bowl, add olive oil, balsamic vinegar, Dijon mustard, garlic powder, kosher salt, and black pepper. Whisk until fully combined.
  • Pour the dressing over the tortellini mixture. Stir gently to coat everything evenly.
  • Refrigerate for about 1 hour before serving, if possible, for best flavor.
  • Garnish with fresh basil before serving.
