Ingredients

CHICKEN

  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 3 large boneless skinless chicken breasts (about 2 pounds), pounded evenly

SALAD

  • 5 cups fresh spinach
  • 1 medium avocado, peeled, pitted, and sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup mini mozzarella cheese balls
  • ¼ cup basil leaves, thinly sliced
  • ½ cup balsamic vinaigrette, adjust to taste

Instructions

  • Season chicken evenly with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken and cook undisturbed for 4-6 minutes. Flip and repeat on the other side until the chicken reaches an internal temperature of 165°F.
  • Remove chicken from the skillet, let it rest for 5 minutes, and then slice.
  • In a large bowl, combine spinach, sliced avocado, cherry tomatoes, mozzarella balls, and basil leaves. Top with sliced chicken and dressing.
  • Toss well and serve
