Position the oven rack at the top of your oven. Preheat the oven to 450°F and set out a large baking sheet lined with parchment paper. Set aside.
Working with one zucchini at a time, trim the ends and then cut each zucchini in half lengthwise.
Cut each half into 4-5 even sticks. Repeat with the remaining zucchini.
Arrange the zucchini sticks evenly on the baking sheet skin-side down, keeping them close together.
Drizzle with olive oil, salt, and pepper. Toss to coat evenly.
In a small bowl, combine panko breadcrumbs and parmesan. Sprinkle the mixture evenly over the tops of the zucchini sticks.
Bake for 27 minutes. Increase the oven temperature to broil for 2-3 minutes, watching carefully, until golden brown.
Serve warm with marinara sauce.
