In a large mixing bowl, add flour and yogurt. Using a wooden spoon, stir until a shaggy dough forms.
Lightly flour a clean work surface. Transfer the dough onto the surface and knead gently with your hands for about 3 to 5 minutes until smooth and elastic. If the dough feels too sticky, sprinkle a bit more flour on the surface and continue kneading until workable.
Shape the dough as desired for your recipe (roll it out for flatbreads, divide it for breadsticks or bagels, or shape into small rounds for hand pies).
Use immediately or cover and refrigerate for up to 24 hours before using.
