Mediterranean Chickpea Salad is a light and refreshing summer salad made with fresh garden veggies, chickpeas, feta cheese, and a light lemon dressing.

Ingredients

  • 3 Roma tomatoes, diced (about 1½ cups)
  • 1 can (15 ounces) garbanzo beans, or fresh drained and rinsed
  • 1 medium cucumber, diced (about ½ cup)
  • ½ red onion, finely diced (about ½ cup)
  • 2 tablespoons chopped cilantro
  • ¼ cup feta cheese, crumbled
  • 3 tablespoons extra virgin olive oil
  • ¼ cup lemon juice, freshly squeezed
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper

Instructions

  • To a large bowl add tomatoes, garbanzo beans, cucumber, onion, cilantro, and feta cheese.
