Ingredients

  • 5 medium red potatoes, washed and cut into 1-inch cubes
  • 1 large yellow onion, peeled and quartered, layers separated
  • 1 pound fresh green beans, rinsed, stems removed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 ring (14-16 ounces) smoked sausage, sliced into ¼-inch pieces

Instructions

  • Preheat the oven to 375°F. Spray a large baking sheet with nonstick cooking spray.
  • In a large bowl, combine potatoes, onions, green beans, olive oil, salt, pepper, garlic powder, and Italian seasoning. Pour onto the prepared baking sheet and bake for 15 minutes.
